I found out a few years ago that making your own pasta/tomato sauce was really easy and so much more delicious than the store bought jar sauce I had been using.
I use a really large can of tomatoes unless it is in the Summer and then I use fresh tomatoes.
This recipe is so easy and uses just a few ingredients.
Tomatoes
Dried or fresh Basil and Oregano
Sauteed Onion
Tomato Paste
Good Red Wine
Salt and Pepper
I didn’t include the amounts because I just pretty much eyeball it and sometimes I make a really large batch and sometimes I make smaller ones. Also you can add mushrooms and peppers if you like.
I usually add about a half a cup of good red wine to the smaller batch and at least a cup when I am making a larger batch.
I add the onions and then I simmer it for around two to three hours. It will become thick and oh so tasty!
I like to add spinach to it and serve it over whole wheat pasta. It is also wonderful over eggplant.
